Here is one of our favorite quick dinners on nights when you put the horses up at 8:30pm and are starving but exhausted. Bacon Tomato Cheese sandwiches.
You’ll need a loaf of fresh baked French bread, mayonnaise – I use the real stuff – Best Foods Real mayonnaise, ripe juicy tomatoes, sliced bacon, grated cheese – I use Lucerne Colby Jack; salt & pepper, garlic salt
Preheat Oven on Broil with rack in the middle
Fry the bacon until just crisp, drain
Slice up enough tomatoes for 2 slices on each sandwich
Slice the French bread to a thickness of about 1-1/4″ slices (guys can usually eat 3 and gals 2)
Toast each piece (in regular toaster) until brown and crisp, place on cookie sheet
Spread a generous amount of mayonnaise on top of each slice of bread
Place 2 tomato slices on each
Sprinkle with salt and pepper, using garlic salt too if desired – I use Lawry’s Garlic Salt with Parsley
Place a handful of cheese on top of each
Place 2-3 slices of cooked bacon on top of cheese
Place all in the oven under the broiler – WATCH CAREFULLY – it doesn’t take long to melt the cheese!
Take out when the cheese has melted and let cool a couple minutes and enjoy!
